Coconut Energy bar

  • 1 cup shredded coconut or coconut milk remnants
  • 1 cup ground walnuts
  • 2 tablespoons dark cocoa powder
  • 3 tablespoons cane sugar or honey
  • Sesame to taste
  • 2 tablespoons chia for every 3 tablespoons of water (pre-soaked)
  • Ground almonds (as a topping)


  • Mix all of the ingredients in a bowl, except for the almonds.
  • When everything is thoroughly combined, form little balls with your hands.
  • Garnish with almonds and refrigerate until the bites are firm.
